Two Eids, Two Different Menus

Pakistan celebrates two Eids with very different food traditions. Eid ul Fitr (after Ramadan) is all about sweets, vermicelli, and the joy of eating during the day again. Eid ul Adha (Festival of Sacrifice) is a meat feast — the freshest, best-quality meat of the year, cooked in every style imaginable.

Eid ul Fitr: Sweet Celebrations

The Essentials

  • Sheer Khurma (Vermicelli Pudding): THE Eid ul Fitr dish. Roasted vermicelli in sweetened milk with dates, pistachios, and almonds. Non-negotiable.
  • Sewaiyan (Sweet Vermicelli): Drier version of sheer khurma — vermicelli roasted in ghee, tossed with sugar and cardamom. Served for breakfast.
  • Kheer (Rice Pudding): Slow-cooked rice in milk, flavored with cardamom and topped with nuts.

Breakfast: Sheer khurma + Sewaiyan + Chai

Lunch (if hosting): Chicken Biryani + Raita + Salad + Gulab Jamun

Eid ul Adha: The Meat Feast

Day 1: Fresh Meat Day

  • Lunch: Mutton Karahi — fast, high-heat, celebrates the freshness of the meat
  • Dinner: Seekh Kebabs on the grill + Naan + Salad

Day 2: Slow-Cooked Specialties

  • Lunch: Nihari (started night before) OR Paye (trotters)
  • Dinner: Mutton Biryani — the grand Eid biryani with fresh, tender meat

Day 3: Comfort & Leftovers

Eid Desserts

  • Gulab Jamun: Deep-fried milk dumplings in sugar syrup. Can be made 2 days ahead — they improve in syrup.
  • Kheer: Rice pudding with cardamom. Make the night before, serve cold.
  • Barfi: Milk fudge squares. Can be made a week ahead and stored in the fridge.
  • Zarda (Sweet Rice): Saffron-colored rice with dry fruits. Beautiful for presentation.

Make-Ahead Timeline

3 days before: Make gulab jamun. Make barfi. Shop for all ingredients.

2 days before: Make kebab mixture (shape into seekh). Marinate biryani meat in yogurt + spices. Make raita base (without salt/garnish).

1 day before: Cook biryani masala base (don't add rice yet). Prepare salad ingredients (chop, store separately). Make any chutneys.

Eid morning: Layer and dum the biryani (1 hour). Grill kebabs (15 min). Finish raita. Order/make naan. Arrange desserts on serving plates.

Tips for Stress-Free Eid Hosting

  • Never cook biryani from scratch on Eid day. The masala base should be ready the night before. Only the dum happens on the day.
  • Gulab jamun is your best friend: It's the one dessert that's BETTER made days ahead. The syrup penetrates deeper each day.
  • Accept naan from the tandoor: Unless you enjoy stress, order naan rather than making it. Focus your energy on the main dishes.
  • Set the table the night before: Plates, cutlery, serving dishes, glasses — everything except the food itself.
