Ingredients

For 6 servings

  • red lentils (masoor dal)1 cup
  • beef, cut into pieces500 g
  • onion, finely chopped2 pc
  • tomatoes, chopped2 pc
  • ginger-garlic paste2 tbsp
  • green chilies, slit2 pc
  • yogurt1/2 cup
  • cumin seeds1 tsp
  • coriander powder1 tbsp
  • red chili powder1 tbsp
  • turmeric powder1/2 tsp
  • garam masala1 tsp
  • water4
  • fresh coriander leaves, chopped1/4 cup
  • saltto taste whole

Step-by-Step Instructions

  1. 1

Begin by rinsing the red lentils under cold water until the water runs clear. This helps remove excess starch and impurities. Soak them in water for about 20 minutes to soften, then drain and set aside.

  2. 2

In a large pot or pressure cooker, heat 3 tablespoons of oil over medium heat. Once hot, add the cumin seeds and allow them to sizzle for about 30 seconds until fragrant, but be careful not to burn them.

  3. 3

Add the finely chopped onions to the pot and sauté until they turn golden brown, which should take about 8-10 minutes. Stir occasionally to ensure even cooking and prevent sticking.

  4. 4

Next, stir in the ginger-garlic paste, and cook for an additional 2 minutes. The mixture should become aromatic, and the raw smell of garlic should dissipate. Add the slit green chilies at this stage for a spicy kick.

  5. 5

Incorporate the chopped tomatoes into the pot, and cook until they break down and become mushy, about 5-7 minutes. Stir in the coriander powder, red chili powder, and turmeric powder, and let the spices cook for another 2-3 minutes until the oil begins to separate from the masala.

  6. 6

Add the beef pieces to the pot, and stir well to coat them in the spice mixture. Cook for about 5 minutes until the meat starts to brown slightly. This step adds depth to the flavor.

  7. 7

Pour in the yogurt and mix thoroughly, allowing the yogurt to blend with the spices and meat. Cook for another 3-4 minutes, ensuring the yogurt is well incorporated and the mixture is bubbling gently.

  8. 8

Add the soaked red lentils and 4 cups of water to the pot. Stir everything together, and season with salt. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 45 minutes to 1 hour. If using a pressure cooker, cook under pressure for about 20-25 minutes.

  9. 9

Check the consistency of the daal gosht; it should be thick yet pourable. If it is too thick, you can add a bit more water and simmer for a few more minutes. Adjust salt and spices to taste.

  10. 10

Once the meat is tender and the lentils are well-cooked, sprinkle garam masala over the top and stir gently. Let it simmer for another 5 minutes to allow the flavors to meld.

  11. 11

Finally, garnish with freshly chopped coriander leaves before serving. Serve hot with steamed basmati rice or naan, ensuring to enjoy the rich, comforting flavors of this authentic daal gosht.

Pro Tips

  • •

Use bone-in meat for richer flavor and tenderness.

  • •

Adjust the yogurt quantity for creamier consistency without overpowering the spices.

  • •

Let the marinated meat sit longer for deeper flavor absorption.

  • •

Serve with a sprinkle of fresh coriander for added aroma and garnish.

Variations

  • →

Use chicken instead of beef or lamb for a lighter dish.

  • →

Incorporate regional spices like garam masala for a distinct flavor profile.

  • →

Swap yogurt with coconut milk for a dairy-free version.
