Ingredients

For 8 servings

  • potatoes (boiled and mashed)4 pc
  • green peas (boiled)1 cup
  • onion (finely chopped)1 pc
  • green chilies (finely chopped)2 pc
  • ginger-garlic paste1 tbsp
  • fresh coriander leaves (chopped)1/2 cup
  • cumin powder1 tsp
  • red chili powder1 tsp
  • chat masala1 tsp
  • saltto taste pinch
  • black pepper powder1/2 tsp
  • bread crumbs1 cup
  • eggs (beaten)2 pc
  • oil (for frying)to taste ml

Step-by-Step Instructions

  1. 1

Begin by peeling and boiling the potatoes until they are fork-tender, which typically takes about 15-20 minutes. Drain the potatoes and let them cool before mashing them smoothly without any lumps.

  2. 2

In a pan, heat a tablespoon of oil over medium heat. Add the finely chopped onions and sauté for about 5 minutes or until they turn translucent and slightly golden, releasing a sweet aroma.

  3. 3

Stir in the ginger-garlic paste and chopped green chilies, cooking for an additional 2 minutes until the raw smell dissipates. Make sure to stir constantly to prevent burning.

  4. 4

Add the boiled green peas to the onion mixture and sauté for another 2-3 minutes. This will blend the flavors and soften the peas a bit. Remove from heat and let the mixture cool slightly.

  5. 5

In a large mixing bowl, combine the mashed potatoes with the sautéed mixture. Add the chopped coriander, cumin powder, red chili powder, chat masala, salt, and black pepper. Mix all ingredients thoroughly until well combined.

  6. 6

Shape the mixture into small patties or cutlets, about the size of your palm. Press them gently to ensure they hold together. You should have around 16-20 cutlets.

  7. 7

Prepare your breading station by placing the beaten eggs in one bowl and the bread crumbs in another. Dip each cutlet first into the egg, allowing excess to drip off, and then coat it with bread crumbs, ensuring an even layer.

  8. 8

In a frying pan, heat sufficient oil over medium heat for shallow frying. To check if the oil is ready, drop a small piece of bread into it; if it sizzles immediately, the oil is hot enough.

  9. 9

Carefully place the breaded cutlets in the hot oil, frying them in batches to avoid overcrowding. Fry each cutlet for about 3-4 minutes on each side or until they are golden brown and crispy.

  10. 10

Once fried, transfer the cutlets onto a plate lined with paper towels to absorb excess oil. Serve hot with mint chutney or ketchup for dipping, and garnish with additional coriander if desired.

  11. 11

Enjoy your freshly made potato cutlets as a delicious snack or appetizer, perfect for any gathering or casual meal.

Pro Tips

  • •

Use starchy potatoes for a fluffy interior and crispy exterior.

  • •

Ensure the onions are well caramelized for a deeper flavor.

  • •

Chill the cutlets for 15-20 minutes before frying to help them hold their shape.

  • •

Experiment with different fresh herbs like mint or coriander to enhance the flavor.

Variations

  • →

Swap regular potatoes with sweet potatoes for a healthier option.

  • →

Add regional spices like garam masala for a more robust flavor profile.

  • →

Make a vegan version by replacing ghee with coconut oil and omitting any dairy.
