Ingredients

For 12 servings

  • spring roll wrappers12 pc
  • cabbage2 cup
  • carrot1 cup
  • bean sprouts1 cup
  • green onion0.5 cup
  • garlic4 clove
  • ginger1 tbsp
  • soy sauce2 tbsp
  • sesame oil1 tbsp
  • ground black pepper1 pinch
  • saltto taste
  • vegetable oilfor frying
  • cilantro0.5 cup
  • egg1 whole
  • chili sauceto taste

Step-by-Step Instructions

  1. 1

Begin by finely shredding the cabbage and grating the carrot. You should aim for small, uniform pieces that will cook quickly and fit well in the spring rolls. Set the vegetables aside in a large mixing bowl.

  2. 2

Add the bean sprouts and finely chopped green onions to the bowl with the cabbage and carrot. Mix thoroughly to ensure even distribution of all ingredients. The mixture should be colorful and vibrant at this stage.

  3. 3

Mince the garlic and ginger, then add them to the vegetable mixture. Pour in the soy sauce and sesame oil, followed by a pinch of ground black pepper and salt to taste. Mix everything together until well combined, ensuring the vegetables are coated with the sauces.

  4. 4

Place a large frying pan over medium heat and add a small amount of vegetable oil. Once the oil is hot, add the vegetable mixture and stir-fry for about 5-7 minutes, or until the vegetables are tender but still crisp. The aroma should be fragrant and inviting.

  5. 5

Remove the pan from heat and let the mixture cool slightly. Once cooled, chop a handful of fresh cilantro and add it to the vegetable filling. This adds a fresh flavor to your spring rolls.

  6. 6

Take a spring roll wrapper and place it on a clean, dry surface with one corner facing you (like a diamond). Spoon about 2 tablespoons of the vegetable filling onto the wrapper, near the corner closest to you.

  7. 7

Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly away from you, sealing the edge with a beaten egg to ensure it stays closed. Repeat this process for the remaining wrappers and filling.

  8. 8

In a deep frying pan, heat enough vegetable oil over medium-high heat to submerge the spring rolls. You will know the oil is ready when small bubbles start to form around a wooden spoon dipped in the oil.

  9. 9

Carefully place the prepared spring rolls into the hot oil, frying them in batches to avoid overcrowding. Fry for about 3-5 minutes, turning occasionally until they are golden brown and crispy on all sides.

  10. 10

Once fried, remove the spring rolls and place them on a plate lined with paper towels to drain excess oil. They should be hot and crispy, and the aroma will be mouthwatering.

  11. 11

Serve the spring rolls warm with chili sauce on the side for dipping. Enjoy your authentic homemade spring rolls as a delightful snack or appetizer!
