Ingredients

For 4 servings

  • semolina (suji)1 cup
  • ghee (clarified butter)1/2 cup
  • sugar3/4 cup
  • water2 cup
  • milk1/2 cup
  • cardamom powder1/2 tsp
  • chopped nuts (almonds, cashews)1/4 cup
  • raisins2 tbsp
  • saffron strandsa pinch whole
  • salta pinch whole
  • rose water1 tbsp
  • vanilla extract1/2 tsp
  • milk (for saffron infusion)2 tbsp
  • water (for soaking saffron)1 tbsp
  • edible silver leaf (optional)as needed pc

Step-by-Step Instructions

  1. 1

Start by preparing the saffron infusion. In a small bowl, soak the saffron strands in 1 tbsp of warm water and 2 tbsp of milk. Let it sit for about 10 minutes until the color and flavor are infused, providing a rich aroma and golden hue to your halwa.

  2. 2

In a heavy-bottomed pan, heat the ghee on medium heat. Once the ghee is melted and hot, add the semolina (suji) and roast it for about 5-7 minutes while stirring continuously. The semolina should turn light golden brown and develop a nutty aroma, indicating it's well roasted.

  3. 3

Next, add the chopped nuts and raisins to the roasted semolina. Continue to stir for another 2-3 minutes until the nuts are lightly toasted and fragrant. This step will enhance the flavor and texture of your halwa.

  4. 4

Gradually pour in the water and milk mixture into the pan, stirring continuously to avoid any lumps. The mixture should start to bubble and thicken, which will take about 2-3 minutes. Ensure that the semolina absorbs the liquids evenly.

  5. 5

Add sugar to the pan and mix well, allowing it to dissolve completely. Keep stirring for another 2-3 minutes until the halwa starts to pull away from the sides of the pan, indicating it's ready.

  6. 6

Incorporate the saffron infusion, cardamom powder, salt, rose water, and vanilla extract into the mixture. Stir well for about 1-2 minutes to blend the flavors harmoniously.

  7. 7

Reduce the heat to low and cover the pan, allowing the halwa to cook for an additional 2-3 minutes. This step helps to meld the flavors and gives a moist texture to the halwa.

  8. 8

Once done, remove the lid and give the halwa a final stir. You should achieve a smooth, glossy consistency. If desired, you can garnish with edible silver leaf for an elegant touch.

  9. 9

Transfer the Suji Ka Halwa to a serving dish. Allow it to cool slightly before serving. Decorate with additional chopped nuts on top for a delightful presentation.

  10. 10

Serve warm, either as a dessert or a sweet snack. Paired with a cup of tea or coffee, it's a perfect treat for any occasion.

Pro Tips

  • •

Toast the semolina in ghee until it turns golden for a richer flavor.

  • •

Use full-fat milk for a creamier texture and taste.

  • •

Adjust the sugar according to your preference; you can use less if you prefer it less sweet.

  • •

Garnish with nuts like almonds or pistachios for added crunch and nutrition.

Variations

  • →

Replace ghee with coconut oil for a vegan option.

  • →

Add saffron for a regional twist that enhances both flavor and color.

  • →

Swap semolina with ground oats for a gluten-free version.
