  • almonds1/4 cup
  • cashews1/4 cup
  • pistachios1/4 cup
  • melon seeds2 tbsp
  • black pepper1/4 tsp
  • cardamom powder1 tsp
  • rose water1 tbsp
  • nutmeg powder1/4 tsp
  • ice cubesto taste pc
  • saffron strandsa pinch whole
  • dried rose petalsto taste pc

Step-by-Step Instructions

  1. 1

Start by soaking the almonds, cashews, pistachios, and melon seeds in water for about 10 minutes. This will soften them, making them easier to blend. After soaking, drain the nuts and seeds and set them aside.

  2. 2

In a blender, add the soaked nuts and seeds along with 1 cup of water. Blend until you achieve a smooth paste, stopping occasionally to scrape down the sides. This should take about 2-3 minutes.

  3. 3

Next, add the sugar, black pepper, cardamom powder, nutmeg powder, and saffron strands to the blender with the nut paste. Blend again for another minute until everything is well combined and smooth.

  4. 4

In a large mixing bowl, pour in the milk and add the blended mixture. Use a whisk to combine everything thoroughly, ensuring that the nut paste is evenly distributed throughout the milk.

  5. 5

Once combined, strain the mixture through a fine sieve or muslin cloth into another bowl or pitcher. This will remove the coarse bits and ensure a smooth drink. Use a spoon to press down on the mixture to extract as much liquid as possible.

  6. 6

After straining, add the rose water to the thandai mixture. Stir well to incorporate the floral notes, which will enhance the overall flavor of the beverage.

  7. 7

Taste the thandai and adjust the sweetness if necessary by adding more sugar as per your preference. Stir until the sugar is dissolved completely.

  8. 8

Chill the thandai in the refrigerator for at least 30 minutes, or serve immediately over ice cubes in tall glasses. The drink should be refreshingly cold and invigorating.

  9. 9

To serve, pour the chilled thandai into glasses and garnish with dried rose petals and additional chopped nuts on top for an elegant presentation.

  10. 10

Enjoy your thandai as a refreshing beverage during festivities or hot summer days, relishing the rich and aromatic flavors with each sip.
