Ingredients

For 4 servings

  • chicken thighs, boneless and skinless500 g
  • yogurt1 cup
  • lemon juice2 tbsp
  • ginger paste1 tbsp
  • garlic paste1 tbsp
  • garam masala1 tbsp
  • cumin powder1 tsp
  • coriander powder1 tsp
  • turmeric powder0.5 tsp
  • red chili powder1 tsp
  • saltto taste whole
  • butter4 tbsp
  • onion, finely chopped1 pc
  • tomato puree1 cup
  • heavy cream0.5 cup
  • fresh cilantro, choppedto taste whole

Step-by-Step Instructions

  1. 1

In a large bowl, combine the yogurt, lemon juice, ginger paste, garlic paste, garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well to create a marinade. Add the chicken thighs and coat them evenly. Let it marinate for at least 30 minutes, preferably in the refrigerator for deeper flavor.

  2. 2

In a heavy-bottomed pan, melt the butter over medium heat. Once melted, add the finely chopped onion and sauté until they turn golden brown, about 5-7 minutes. Stir occasionally to ensure even cooking and prevent burning.

  3. 3

Add the marinated chicken to the pan, including all the marinade. Cook the chicken for about 10 minutes, stirring occasionally. The chicken should start to brown and the spices should become fragrant, filling your kitchen with a wonderful aroma.

  4. 4

Once the chicken is browned, pour in the tomato puree. Stir well to combine and bring the mixture to a simmer. Allow it to cook for another 10 minutes, during which the flavors will meld together beautifully.

  5. 5

After 10 minutes, reduce the heat to low and add the heavy cream. Stir until fully incorporated. This will give the dish its characteristic creaminess and rich flavor. Cook for an additional 5 minutes, letting the sauce thicken slightly.

  6. 6

Taste the sauce and adjust the seasoning with additional salt or chili powder if desired. The sauce should be aromatic and flavorful, with a balance of spices and creaminess.

  7. 7

Once the sauce has thickened to your liking, remove the pan from heat. Let it sit for a couple of minutes to allow the flavors to settle.

  8. 8

Garnish the butter chicken with freshly chopped cilantro before serving. This adds a pop of color and freshness to the dish.

  9. 9

Serve the butter chicken hot, ideally with naan or basmati rice to soak up the rich sauce. Consider serving with a side of raita for a refreshing contrast.

  10. 10

Enjoy your authentic butter chicken, sharing it with family or friends, and relish the depth of flavors you have created!

Pro Tips

  • •

Use bone-in chicken for more flavor and tenderness.

  • •

Allow the marinated chicken to sit overnight for deeper flavor absorption.

  • •

Adjust the spice level by varying the amount of red chili powder according to your preference.

  • •

For a creamier texture, add a splash of heavy cream just before serving.

Variations

  • →

Use tofu or tempeh for a vegetarian alternative.

  • →

Incorporate regional spices like saffron or cardamom for a unique twist.

  • →

Substitute yogurt with cashew cream for a dairy-free option.
