Ingredients

For 4 servings

  • whole chicken, cut into pieces1 kg
  • onions, finely sliced2 pc
  • ginger-garlic paste2 tbsp
  • tomatoes, pureed2 pc
  • green chilies, slit4 pc
  • yogurt1 cup
  • cooking oil4 tbsp
  • coriander powder1 tbsp
  • cumin powder1 tsp
  • red chili powder1 tbsp
  • turmeric powder1/2 tsp
  • garam masala powder1 tsp
  • fresh coriander leaves, chopped1/2 cup
  • saltto taste pinch
  • lemon juice1 tbsp

Step-by-Step Instructions

  1. 1

Heat the cooking oil in a heavy-bottomed handi (pot) over medium heat. Once hot, add the finely sliced onions and sauté until they turn golden brown, stirring occasionally for about 10 minutes. The onions should be caramelized, providing a rich base for the dish.

  2. 2

Add the ginger-garlic paste to the onions and sauté for another 2-3 minutes until the raw smell disappears. The mixture should be fragrant and slightly bubbly, indicating that the spices are well-cooked.

  3. 3

Stir in the pureed tomatoes and cook for 5-7 minutes until the oil separates from the masala. The mixture should thicken, and you will see the oil glistening at the edges, showing that it’s ready for the next step.

  4. 4

Add the chicken pieces to the masala and mix well to coat them evenly. Cook for about 8-10 minutes, stirring occasionally until the chicken changes color and is no longer pink. The chicken should begin to absorb the flavors of the spices.

  5. 5

In a bowl, whisk together the yogurt, red chili powder, turmeric, coriander powder, cumin powder, and salt. Once well mixed, add this yogurt mixture to the chicken in the handi. Stir it thoroughly to ensure every piece is coated.

  6. 6

Cover the handi with a lid and let it cook on low heat for about 20 minutes. Stir occasionally, ensuring the chicken does not stick to the bottom. The chicken will become tender and juicy as it cooks in its own juices.

  7. 7

After 20 minutes, check the chicken for tenderness. If cooked, add the slit green chilies and garam masala powder. Mix gently and cook for an additional 5 minutes, allowing the flavors to meld together. The dish should be aromatic with the spices and chilies enhancing the flavor.

  8. 8

Turn off the heat and let the Chicken Handi rest for a few minutes. This will allow the flavors to settle and intensify. The gravy should be thick and rich, with a vibrant color.

  9. 9

Finally, garnish with freshly chopped coriander leaves and drizzle with lemon juice before serving. Serve the Chicken Handi hot with naan or rice, ensuring to scoop up the delicious gravy with each bite.

  10. 10

Enjoy your authentic Chicken Handi with your choice of bread or rice, savoring the rich blend of spices that represent true Pakistani cuisine.
