Ingredients

For 6 servings

  • Basmati rice2 cup
  • Chicken (cut into pieces)1 kg
  • Onion (sliced)2 pc
  • Ginger-garlic paste2 tbsp
  • Tomato (chopped)1 pc
  • Green chilies (slit)2 pc
  • Yogurt1/2 cup
  • Cumin seeds1 tbsp
  • Cinnamon stick1 whole
  • Cardamom pods4 pc
  • Cloves4 pc
  • Bay leaves2 whole
  • Saltto taste
  • Oil or ghee1/2 cup
  • Water4 cup

Step-by-Step Instructions

  1. 1

Begin by washing the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in water for about 30 minutes to allow it to soften, which will help in achieving the perfect texture later on.

  2. 2

In a large pot, heat the oil or ghee over medium heat. Once hot, add the cumin seeds, cinnamon stick, cardamom pods, cloves, and bay leaves. Sauté the whole spices for about 1 minute until they release their aroma, making sure not to burn them.

  3. 3

Add the sliced onions to the pot and sauté them until they turn golden brown, which should take about 8-10 minutes. Stir frequently to ensure even cooking and prevent sticking.

  4. 4

Once the onions are browned, add the ginger-garlic paste and green chilies to the pot. Stir well and cook for another 2-3 minutes until the raw smell of the ginger-garlic disappears.

  5. 5

Introduce the chicken pieces to the pot, stirring them thoroughly to coat with the spices. Cook for about 5-7 minutes until the chicken is no longer pink and starts to brown slightly.

  6. 6

Add the chopped tomato and yogurt to the pot. Mix everything together and season with salt to taste. Cook the mixture for an additional 5-10 minutes until the tomatoes soften and the oil starts to separate from the gravy.

  7. 7

Drain the soaked rice and gently add it to the pot. Carefully mix the rice with the chicken and spices to avoid breaking the grains. Pour in the water and give it a gentle stir to combine all ingredients.

  8. 8

Increase the heat to high and bring the water to a boil. Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer for about 15-20 minutes. This will allow the rice to cook thoroughly and absorb all the flavors.

  9. 9

After 20 minutes, turn off the heat but leave the pot covered for an additional 10 minutes. This resting time allows the steam to finish cooking the rice without overcooking it.

  10. 10

Finally, fluff the chicken pulao gently with a fork to separate the grains. Serve hot, garnished with fresh cilantro or fried onions, alongside raita or salad for a complete meal.

  11. 11

Enjoy your authentic Chicken Pulao, relishing the blend of spices and tender chicken with perfectly cooked basmati rice.

Pro Tips

  • •

Soak the rice for at least 30 minutes before cooking to achieve the perfect texture.

  • •

Use a combination of ghee and oil for richer flavor and aroma.

  • •

For extra depth, add a few whole spices like cardamom and cloves during the cooking process.

  • •

Always adjust the liquid based on the type of rice used to ensure proper cooking.

Variations

  • →

Substitute chicken with mutton or beef for a heartier version.

  • →

Add regional spices such as saffron or dried fruits for a more luxurious dish.

  • →

Use brown rice instead of white for a healthier option.
