Step-by-Step Instructions
- 1
Start by rinsing the whole black urad dal and kidney beans under cold water until the water runs clear. Soak them in enough water for at least 8 hours or overnight to ensure they soften properly.
- 2
After soaking, drain the dal and beans. In a large pot, add the soaked dal, kidney beans, and 4 cups of fresh water. Bring the mixture to a boil over medium heat and then reduce to a simmer. Cook for about 1.5 to 2 hours until the beans are tender and creamy. You can use a pressure cooker to speed up the process, cooking for about 15-20 minutes under pressure.
- 3
While the dal is cooking, prepare the tempering (tadka). In a separate pan, heat 4 tablespoons of ghee or unsalted butter over medium heat. Once melted, add 1 teaspoon of cumin seeds and wait until they start to sizzle and darken slightly, which should take about 30 seconds.
- 4
Add 1 tablespoon of ginger-garlic paste to the pan and sauté for about 1-2 minutes until fragrant, ensuring it does not burn. The mixture should turn golden brown, releasing a rich aroma into the air.
- 5
Next, add 1 finely chopped onion to the pan and cook until it turns translucent and golden brown, which will take about 5-7 minutes. Stir occasionally to prevent sticking and burning.
- 6
Once the onion is ready, pour in 2 pureed tomatoes and stir well. Cook for about 10 minutes on medium heat until the oil starts to separate from the tomato mixture. You should see bubbles forming around the edges.
- 7
Add 2 slit green chilies, 1 teaspoon of red chili powder, 1 teaspoon of coriander powder, and salt to taste. Mix well and cook for another 5 minutes. The mixture should become thick and aromatic.
- 8
Once the dal and kidney beans are tender, add the tomato-onion mixture to the pot. Stir well to combine. Cook on low heat for another 30 minutes, allowing the flavors to meld together. Stir occasionally and add water if the dal gets too thick.
- 9
After 30 minutes, sprinkle in 0.5 teaspoon of garam masala and stir. Then, add 0.5 cup of cream for added richness. Mix well and allow to simmer for an additional 5-10 minutes until creamy and well combined.
- 10
Finally, garnish with 2 tablespoons of freshly chopped coriander leaves before serving. Serve hot with naan, rice, or roti for a delicious meal.
