Ingredients

For 4 servings

  • fish fillets (e.g., pomfret or tilapia)500 g
  • onion, finely chopped1 whole
  • tomatoes, pureed2 whole
  • ginger-garlic paste1 tbsp
  • green chilies, slit2 pc
  • coconut milk1 cup
  • coriander powder1 tbsp
  • cumin powder1 tbsp
  • turmeric powder1 tsp
  • red chili powder1 tsp
  • fresh coriander leaves, chopped1/4 cup
  • saltto taste
  • oil (preferably mustard or vegetable oil)3 tbsp
  • lemon juice1 tbsp
  • whole spices (cinnamon stick, cardamom pods, cloves)1 pc

Step-by-Step Instructions

  1. 1

Begin by cleaning the fish fillets under cold water and patting them dry with kitchen paper. Cut them into chunks if they are large, and marinate with salt and lemon juice for about 10 minutes to enhance the flavor.

  2. 2

In a large pot or deep skillet, heat the oil over medium heat. Once hot, add the whole spices (cinnamon stick, cardamom pods, and cloves) and sauté for about 1-2 minutes until fragrant, ensuring they do not burn.

  3. 3

Add the finely chopped onions to the pot and fry them for approximately 5-7 minutes, stirring occasionally, until they are golden brown. This step is crucial as it builds the base flavor for the curry.

  4. 4

Stir in the ginger-garlic paste and green chilies, and cook for another 2-3 minutes until the raw smell disappears, which will add depth to the curry's aroma.

  5. 5

Incorporate the pureed tomatoes into the mixture and cook for about 5-6 minutes until the oil starts to separate from the mixture, indicating that the tomatoes are well-cooked.

  6. 6

Add the coriander powder, cumin powder, turmeric powder, and red chili powder to the pot. Mix well and sauté for another 2-3 minutes, allowing the spices to bloom and infuse their flavors into the base.

  7. 7

Pour in the coconut milk and stir to combine all the ingredients. Bring the mixture to a gentle simmer, allowing the flavors to meld together for about 3-4 minutes.

  8. 8

Carefully add the marinated fish fillets into the curry, ensuring they are submerged in the sauce. Cook for about 7-10 minutes, depending on the thickness of the fish, until the fish is cooked through and flaky.

  9. 9

Taste the curry and adjust the salt as necessary. Add the chopped fresh coriander leaves just before serving for a fresh touch and garnish.

  10. 10

Serve the fish curry hot with steamed rice or naan, allowing the creamy sauce to cling to the grains, enhancing each bite with rich, savory flavors.

  11. 11

Enjoy your authentic fish curry, taking note of the balance between the spices and the creamy coconut, which should leave a lasting impression on your palate.

Pro Tips

  • •

Ensure the fish is fresh for the best flavor and texture.

  • •

Adjust the cooking time based on the thickness of the fish to prevent it from becoming dry.

  • •

For added depth, marinate the fish in spices and lemon juice for at least 30 minutes before cooking.

  • •

Serve with steamed basmati rice or naan to soak up the delicious curry sauce.

Variations

  • →

Use tofu or paneer for a vegetarian version of the curry.

  • →

Incorporate coconut milk for a creamy coastal variation popular in southern regions.

  • →

Swap out the green chilies for red chili powder for a spicier kick.
