  • full-fat milk4 cup
  • heavy cream1 cup
  • sugar3/4 cup
  • sweetened condensed milk1 cup
  • cardamom powder1 tsp
  • rose water1 tbsp
  • pistachios1/4 cup
  • almonds1/4 cup
  • saffron strandspinch whole
  • milk powder1/2 cup
  • vanilla extract1 tsp
  • salta pinch whole
  • chopped dates1/4 cup
  • chopped fresh mango1/2 cup

Step-by-Step Instructions

  1. 1

    In a large saucepan, combine the '4 cups' of full-fat milk and '1 cup' of heavy cream. Place over medium heat, stirring continuously to prevent scorching. Bring to a gentle boil, then reduce the heat to low and simmer for about '10 minutes' until the mixture thickens slightly.

    Add '3/4 cup' of sugar, '1 cup' of sweetened condensed milk, '1 tsp' of cardamom powder, and '1 tbsp' of rose water to the saucepan. Stir well until the sugar has completely dissolved and the mixture is smooth, which should take around '5 minutes'.

    In a separate bowl, mix '1/2 cup' of milk powder with a small amount of the hot milk mixture to create a smooth paste. This will help to avoid lumps. Once smooth, add this paste back into the saucepan and stir continuously for another '5 minutes'.

    Add a pinch of saffron strands to the mixture, allowing them to steep and infuse their flavor as the kulfi mixture continues to cook. Make sure to stir well to incorporate the saffron evenly throughout the mixture.

    Remove the saucepan from heat and allow the mixture to cool slightly at room temperature for about '10-15 minutes'. This helps to prevent condensation when stored in molds.

    While the mixture cools, chop '1/4 cup' of pistachios and '1/4 cup' of almonds. Reserve some for garnishing the kulfi later. Also, chop '1/4 cup' of dates and '1/2 cup' of fresh mango, which will be added for texture and flavor.

    Once the mixture has cooled, stir in the chopped dates and mango pieces along with '1 tsp' of vanilla extract and a pinch of salt. Ensure everything is well combined.

    Pour the kulfi mixture into kulfi molds or small cups. If using molds, insert wooden sticks into the center of each mold. Tap the molds gently on the countertop to remove any air bubbles.

    Cover the molds with plastic wrap to prevent ice crystals from forming. Place them in the freezer and leave them to set for at least '6 hours' or preferably overnight for the best texture.

    To serve, remove the kulfi from the molds by running warm water over the outside of the molds for a few seconds. This will help release the kulfi easily. Garnish with the reserved chopped nuts and serve immediately.
