Ingredients

For 4 servings

  • boneless chicken thighs500 g
  • yogurt1 cup
  • ginger-garlic paste2 tbsp
  • red chili powder1 tbsp
  • turmeric powder1/2 tsp
  • cumin powder1 tsp
  • coriander powder1 tsp
  • garam masala1 tsp
  • lemon juice2 tbsp
  • saltto taste
  • oil2 tbsp
  • fresh coriander leaves1/4 cup
  • green chilies2 whole
  • butter1 tbsp
  • skewers4 pc

Step-by-Step Instructions

  1. 1

Begin by cutting the boneless chicken thighs into bite-sized cubes, approximately 1-2 inches in size. This ensures even cooking and easy handling on the skewers.

  2. 2

In a mixing bowl, add the yogurt, ginger-garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, lemon juice, and salt. Whisk these ingredients together until they form a smooth marinade.

  3. 3

Add the chicken cubes into the marinade and mix well, ensuring that all pieces are thoroughly coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes to absorb the flavors.

  4. 4

While the chicken is marinating, soak the skewers in water for about 15 minutes. This prevents them from burning while grilling.

  5. 5

After marination, take the chicken out of the refrigerator. Preheat your grill or oven to a medium-high temperature (about 200°C or 400°F).

  6. 6

Thread the marinated chicken pieces onto the soaked skewers, leaving a small gap between each piece for even cooking. You can also alternate with pieces of green chilies for added flavor.

  7. 7

Once all the chicken is skewered, brush them lightly with oil to prevent sticking and enhance browning. Place the skewers on the grill or in the oven.

  8. 8

Cook the skewers for about 10-12 minutes, turning them halfway through to ensure even cooking. Look for a nice char and the chicken should be cooked through, no longer pink inside.

  9. 9

In the last minute of cooking, add a small piece of butter on top of each skewer to enhance flavor and moisture.

  10. 10

Once cooked, remove the skewers from the grill and let them rest for a couple of minutes. This helps in retaining the juiciness of the chicken.

  11. 11

Garnish the Malai Boti with freshly chopped coriander leaves and serve hot with mint chutney and lemon wedges for an authentic appetizer experience.

Pro Tips

  • •

Ensure the meat is well-marinated for at least 1-2 hours to enhance flavor and tenderness.

  • •

Use fresh herbs like cilantro or mint for garnishing to elevate the dish's presentation.

  • •

Cook on medium heat to prevent the spices from burning while allowing the meat to cook through.

  • •

Adjust the amount of green chilies based on your preferred spice level; for a milder version, remove the seeds.

Variations

  • →

Substitute chicken with paneer for a vegetarian version.

  • →

Add a regional twist by incorporating local spices such as garam masala or using coconut milk for a South Indian flavor.

  • →

Swap tomatoes for bell peppers to add a sweet crunch and a different texture.
