Ingredients

For 6 servings

  • mutton (or beef) pieces1 kg
  • onions, finely sliced2 pc
  • ginger-garlic paste2 tbsp
  • plain yogurt1 cup
  • red chili powder2 tbsp
  • turmeric powder1/2 tsp
  • coriander powder1 tbsp
  • cumin powder1 tbsp
  • garam masala1 tbsp
  • green chilies, slit4 pc
  • fresh coriander leaves, chopped1/2 cup
  • oil or ghee1/2 cup
  • saltto taste pinch
  • water1
  • lemon juice2 tbsp

Step-by-Step Instructions

  1. 1

    Heat the oil or ghee in a large pot over medium heat. Once hot, add the sliced onions and sauté them until they turn golden brown, which should take about 10-15 minutes. Stir frequently to ensure even browning.

    Add the ginger-garlic paste to the pot and cook for another 2-3 minutes until the raw smell disappears. The mixture should become aromatic and slightly darker in color.

    Next, add the mutton (or beef) pieces to the pot. Sear the meat for 5-7 minutes, stirring occasionally until it is browned on all sides. This step locks in the flavors and enhances the dish’s richness.

    In a bowl, mix the yogurt, red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Once the meat is browned, add this yogurt mixture to the pot. Cook for another 5 minutes while stirring to coat the meat evenly with the spices.

    Pour in the water and bring the pot to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 90 minutes. Stir occasionally and check if more water is needed; the meat should become tender and the gravy should thicken.

    After 90 minutes, check the tenderness of the meat. If it’s not tender enough, continue to simmer, checking every 10 minutes until it reaches the desired doneness. The meat should be soft and falling off the bone.

    Once the meat is tender, add the slit green chilies, garam masala, and lemon juice. Stir well and let it cook for another 10 minutes uncovered. This will allow the flavors to meld and the gravy to reduce slightly.

    Finally, taste the dish and adjust the salt if necessary. Garnish with chopped fresh coriander leaves just before serving. The dish should have a rich color and a fragrant aroma from the spices.
