Ingredients

For 6 servings

  • whole chicken1 pc
  • yogurt1 cup
  • lemon juice1/4 cup
  • ginger-garlic paste2 tbsp
  • red chili powder2 tbsp
  • cumin powder1 tbsp
  • coriander powder1 tbsp
  • turmeric powder1 tsp
  • black pepper1 tsp
  • saltto taste whole
  • green chilies4 pc
  • fresh coriander leaves1/2 cup
  • butter1/2 cup
  • whole garam masala (cardamom, cloves, cinnamon)1 tbsp
  • rice (for serving)2 cup

Step-by-Step Instructions

  1. 1

Start by cleaning the whole chicken thoroughly under cold water. Pat it dry with paper towels and make deep cuts into the flesh to allow the marinade to penetrate the meat effectively. This will ensure that the chicken absorbs all the flavors.

  2. 2

In a large mixing bowl, combine yogurt, lemon juice, ginger-garlic paste, red chili powder, cumin powder, coriander powder, turmeric powder, black pepper, and salt. Whisk them together until smooth to create a marinade that is rich in flavor and has a creamy consistency.

  3. 3

Add the cleaned chicken into the marinade, ensuring that it is well-coated. Massage the marinade into the cuts and the cavity of the chicken. This step is crucial for flavor infusion. Cover the bowl with plastic wrap and refrigerate for at least 120 minutes, ideally overnight for deeper flavor.

  4. 4

While the chicken is marinating, prepare the green chutney by blending green chilies and fresh coriander leaves with a pinch of salt and a little water until smooth. This will serve as a tangy accompaniment to the sajji.

  5. 5

Preheat your oven to 180°C (350°F) once the marinating time is nearly complete. You want to ensure that the oven is hot enough to cook the chicken evenly and achieve a crispy skin.

  6. 6

Take the marinated chicken out of the refrigerator and let it come to room temperature for about 15 minutes. This will help in even cooking. Place the chicken on a roasting rack in a baking dish, allowing air to circulate around it.

  7. 7

Melt the butter in a small saucepan over medium heat. Add the whole garam masala and let it infuse for a minute. Then, brush this melted butter generously over the chicken, ensuring it covers all areas for a rich flavor and moisture.

  8. 8

Roast the chicken in the preheated oven for about 90 minutes, basting it with the melted butter every 30 minutes. The chicken should be golden brown and the juices should run clear when pierced with a knife. A good visual cue is a crispy, golden skin.

  9. 9

Once roasted, remove the chicken from the oven and allow it to rest for 10-15 minutes. This resting period lets the juices redistribute, making the chicken tender and juicy.

  10. 10

Serve the Chicken Sajji warm, garnished with fresh coriander leaves and accompanied by the green chutney and steamed rice. The dish should be visually appealing, with the golden-brown chicken at the center of the platter, ready to be enjoyed.

  11. 11

Enjoy this delicious and aromatic Chicken Sajji as a flavorful appetizer, perfect for gatherings and special occasions.

Pro Tips

  • •

Ensure the chicken is marinated for a minimum of 2 hours for maximum flavor absorption.

  • •

Use a meat thermometer to check for doneness; the internal temperature should reach 75°C (165°F).

  • •

For an authentic smoky flavor, consider using a charcoal grill or adding a piece of smoking wood during cooking.

  • •

Serve the dish immediately after resting to maintain its juiciness and flavor.

Variations

  • →

Marinate using Greek yogurt for a creamier texture.

  • →

Try a regional twist by using a blend of spices typical of Sindhi cuisine, like coriander and cumin.

  • →

Swap chicken for mutton or goat meat for a richer taste and different texture.
